Ingredients are carefully chosen with sustainability in mind. Local sourcing and zero-waste techniques are at the core of the approach, with highlights including the bar’s own Stucky 1975 Venice Gardens Gin and an in-house “super lime juice” that makes use of the entire fruit.

The new drinks menu doesn’t just list ingredients; each cocktail has a distinct identity.
Take the Blushing Dawn, which blends Absolut Elyx Vodka with tonka and vanilla syrup, passionfruit, and foam. It’s described as “a whispered promise, full of warmth and new beginnings.” Then there’s the Crimson Flame, a rich mix of Havana 3 & 7 Rum, Passoa, orange juice and pepper syrup, called “bold, seductive and impossible to ignore.”
The Last Date mixes Jameson Black Barrel with date broth and bitters, while Twilight Indulgence takes a more layered approach with five spirits including Amaro Locale 207 and Cadello Liqueur.
Other standouts include the Serenissima Glow, made with the house gin, 1 cordial and chamomile infusion, and the Umami Clouds, which combines olive oil-washed tequila with tomato cordial and a rim of tomato and tortilla.
For something punchy, Rising Tempest brings together vodka, tequila, gin, rum, Cointreau, lime and kola soda into a drink that’s “a force of nature in every sip.”
More refreshing options come in the form of Azure Reverie, with green tea and mint, or the Venetian Lagoon, which leans into local spirits and ingredients like Gin dei Sospiri and a salamoia and purple cabbage infusion. For a slightly sweeter option, Ruby Mirage blends hibiscus soda with Malfy Grapefruit and Agrumi Liquor, offering a colourful, lighter take to round off the list.

The relaunch ties in with broader developments across Hilton Molino Stucky Venice. Over the past year, the hotel has been steadily upgrading its offerings. In April 2024, 24 new suites designed by Biagio Forino were added to the property.
With 379 rooms and suites in total, many with lagoon views, the hotel has long been known for its size and facilities, including one of Venice’s largest spas and a comprehensive conference centre. It’s one of only two hotels in Italy with an eforea Spa and is accessible by private water taxi, adding an extra layer of exclusivity to each arrival.
