Take the Ica, for instance, a cocktail inspired by the river winding its way between Mexico and Peru. Built around The Lost Explorer’s Espadín and Salmiana infusions, the drink fuses chicha morada, membrillo, pineapple, and a warming blend of spices. The result? Then there’s the Tigre, a playful homage to the river known for its striking two-toned waters. This reimagined Piña Colada arrives theatrically encased inside a pineapple, brimming with passion fruit and Brazilian nuts. The Napo offers something altogether more refined. A chic riff on a Spritz, it blends Cîroc Vodka, melon, Aperol, prickly pear, and Champagne, served in a delicate wave-shaped vessel carrying a seashell. One of the centrepieces of the new offering is the Amazónico Lost Explorer Infuser, a bespoke six-glass infusion tower created in partnership with The Lost Explorer, a boutique Mezcal and Tequila brand known for its commitment to sustainability. Positioned prominently at the front of the restaurant, the tower slowly draws out the essence of fruits, herbs, and spices over 12 to 36 hours, offering a deeply aromatic and layered tasting experience.
