Chef Pam Pichaya Soontornyanakij: Asia’s Best Female Chef 2024

The resort will first host Chef Pam Pichaya Soontornyanakij, crowned Asia’s Best Female Chef 2024. Chef Pam will take over the Summer Pavilion, the prestigious Indian Ocean extension of Singapore’s Michelin-starred venue at The Ritz-Carlton, Millenia Singapore.

On the 10th and 11th of August, she will bring her culinary genius from Bangkok’s POTONG, ranked #17 in Asia’s 50 Best Restaurants, to a location renowned for its design and culinary heritage.

As the first and youngest female chef to receive both a Michelin Star and the ‘Opening of the Year’ award from the Michelin guide in the same year, Chef Pam will present an eight-course tasting menu. This menu will showcase her progressive Thai-Chinese cuisine, reflecting her signature 5-Element philosophy.

Guests can anticipate a blend of Thai culinary traditions with innovative flavours. Chef Pam’s tasting menu will feature her innovative approach to traditional dishes. The ‘Parts of Banana’ dish creatively uses the meat, peel, flower, and stalk of the fruit, offering a unique culinary tribute.

‘POTONG’s Pad Thai’ reinterprets Thailand’s national dish, while ‘Yin Yang Noodle’ evokes Chef Pam’s childhood memories with a touch of nostalgia through morels and a creamy chicken broth.

The Summer Pavilion at The Ritz-Carlton Maldives provides the perfect setting for this sensory feast. Guests enter through a circular ‘moon-gate’ and navigate a water court and garden before reaching the lantern-lit dining room, which hovers above the crystal-clear waters of the Indian Ocean.

The luxurious surroundings enhance the culinary experience, ensuring that every dish is enjoyed in a serene and visually stunning environment. The dining room’s design, combining traditional and contemporary elements, creates an atmosphere that complements the innovative cuisine.

When people think of Thai food, they think of northern, southern, central or north-eastern, but Thai-Chinese is a sub-cuisine. Chinese people have been migrating to Thailand for over 800 years and they’ve brought a lot of food culture with them. I’m excited to showcase my menu – 5 Senses, 5 Elements, A Journey Through Time – in this unique setting, for a truly unparalleled and thought-provoking dining experience.”

Mixology Marvel: Matteo Cadeddu at EAU Bar

Joining the culinary celebration, Matteo Cadeddu of Opium, ranked #59 in Asia’s 50 Best Bars, will take over The Ritz-Carlton Maldives’ EAU Bar on the 9th and 10th of August. Known for its “liquid surrealism,” Opium will bring its flawlessly executed mixed drinks to the resort’s Behind the Bar series.

Cadeddu’s menu promises to delight the senses. ‘Han Solo’ combines Mezcal, Pineapple Tepache, lime, honey, soda, and a dash of orange bitters, offering a bold and adventurous flavour. ‘Incognito’ features a mysterious blend of gin and bergamot liqueur, while ‘Granadaladahaha’ intrigues with whiskey, pomegranate, coconut yogurt, and homemade coffee coconut vermouth.

‘Sun Tan’ warms with Hojicha whisky, Cognac VSOP, Cocchi Torino, and homemade chocolate-hojicha liqueur, evoking sun-kissed afternoons.

The EAU Bar, shaped by the ocean forces, wind, and waves, provides an elegant setting of outstanding architectural merit. Guests can enjoy a celebration of the world’s finest sips against the backdrop of the resort’s Defining Moment, a daily sunset ritual featuring a Bodu Beru performance of Maldivian drums and an insta-worthy flaming ceremony.
