In a feat that has London’s culinary world talking, MICHAEL CAINES at The Stafford has earned its first Michelin Star just five months after opening. The Michelin Guide Great Britain & Ireland 2026 recognition marks both the celebrated chef’s triumphant capital debut and The Stafford London’s first star in its 113-year history.

Five Months to Michelin Glory

September 2025 to January 2026. That’s how long it took for Michael Caines MBE to translate his decades of experience into London success. The timeline is remarkable even by industry standards, where restaurants typically wait years for such recognition.

The achievement carries particular weight for The Stafford London. Since 1912, the St James’s hotel has hosted everyone from French Resistance heroine Nancy Wake to the Queen Mother, but never a Michelin-starred restaurant. That changed this month.

“To be awarded a Michelin star at The Stafford London is a truly special moment,” Caines reflects. “It is the first in the hotel’s history, and a first for my debut London residence, making it even more meaningful. Michelin recognition is always about the collective effort , the passion, discipline, and consistency of the entire team. Terroir Cuisine in the Capital

The philosophy behind the star is what Caines calls ‘terroir cuisine’. It’s food that speaks of place, season, and provenance. Pan Roasted Brixham Turbot arrives when the catch is at its peak. Confit Duck & Duck Liver Terrine reflects months of relationship-building with trusted producers.

This isn’t cuisine as performance. It’s cuisine as conversation between chef, ingredient, and season. The signature tasting menu changes as suppliers deliver their finest, whether that’s spring vegetables from Hampshire or game from Scottish estates.

Executive Head Chef James Willis translates Caines‘ vision into daily reality across breakfast, lunch, and dinner services. Historic St James’s provides more than just prestigious postcode. The Stafford’s 400-year-old wine cellars feature underground corridors to St James’s Palace. The Carriage House, where 18th-century nobility once stabled their horses, now houses some of London’s most distinctive suites.

The restaurant operates within 106 uniquely designed rooms and suites spread across the Main House, modern Mews building, and historic Carriage House. Each space carries its own character, but the dining room commands attention as the newest jewel in The Stafford’s crown. Like the recently opened Shepherd Mayfair Hotel set to debut in 2026, The Stafford demonstrates how London’s luxury hospitality scene continues to evolve.

His 2025 appointment as Culinary Strategist at The Stafford generated considerable anticipation across London’s dining scene. The rapid Michelin recognition validates that excitement and positions the restaurant among the capital’s serious dining destinations.

The restaurant offers comprehensive dining options beyond the tasting menu. Seasonal à la carte, breakfast service, plus vegetarian and vegan menus. Wine pairings complement each offering, selected to enhance rather than overwhelm the food.
