2008: A Tasting Of The Year The Vines Remembered
The honoured vintage of 2008 is often spoken of in the most agile hushed tones. In Champagne’s sun-dappled vineyards, the season had awakened with the impression of an unhurried coolness, which in turn, invited a sense of concern from producers who relied on the balmy warmth to hone fruit befitting the Champagne era; until nature had an enlivening plan.
As the golden Summer interval began to make its descent, the sun and its heat had emerged with composed grace ripening the grapes with a tempered heat, before the lengthy curtailed days and soothing cool nights had no sooner began to produce the finest fruit brimming with taintless purity, and a bold sapid acidity all woven in with an aromatic elegance.
This was restraint personified, an orchestral sonata in Dom’s exquisite champagne pursuit as the first vintage collection of 2008 had exhibited its rare release in 2018.
The story then continued to unfold beneath the Maison’s cellars where after over fifteen years of mapalé ageing, the 2008 in time had built up to the Dom Pérignon Plénitude Deuxième (P2); an unprecedented, delectable second act which no sooner, had revealed a hidden labyrinth of remarkable tipple dimensions in silken textures, rich aromas, and an inviting soul.
A debonair bottle cloaked in a strapping armour of cobra black gunmetal, the silk-like shimmering liquid gold sings to an infectious musical waltz, which basks in announcing its powerful verve on the palate even before a first sip as light mousse rises in an assembly of idle, yet sculpted streams on each perfect pour.
Revealing a satin texture demonstrating both a robust and dainty profile like a couture silk gown pleated with precision and edged with lace, fragrant aromas of heady ripe lemon confit ring with a delicious trill to the perfume of sweet sugared white peach, giving rise to the mild flavours of warm crumbled pastry, rich almond cream and tangy smooth orange oil before that bittersweet crescendo, echoing the sapid relish of burnt caramel to be concluded with a vigorous flicker of spiced ginger.

To pair Dom Pérignon P2 is to curate jovial libertine theatre, demanding solely the sublime aristocratic dining company and poetic gourmet artistry on a plate, all dished up to resonate with the champagne’s valiant depth and towering elevation.
Nothing makes for a regal Dom Pérignon P2 banquet initiation than ice-chilled shucked Oysters, topped with a wispy dollop of bergamot foam. The sparkling wine’s saline, crisp, clean minerality mirrors the sea and its elite oceanic offering, as briny notes of the delicate oyster meat play to the bergamot’s bright citrus pull across the palate, giving rise to an interplay of youth and gravitas.
Hoisting the degree of sybaritic hedonism up a notch or three is none other than a lobster thermidor gratinéed with black truffle. The Dom Pérignon’s creamy, pristine savour and sharp fruit relish cuts through the indulgent richness of this decadent dish with fine finesse and faultless ease, as effortlessly sliced tender lobster chunks come twinned with the tuneful union of mild creamed béchamel, and earthy truffled shavings.
