- 1 Mixing bowl Small
- 1 Electric Hand Mixer
- 1 Non-Stick frying pan
Ingredients
For the pancakes
- 100 grams Flour
- 11 grams Baking Powder
- 2 Egg Yolks
- 4 Egg Whites
- 20 ml Milk
- 5 g Sugar
- 1 pinch Salt
For the topping
- 4 slices Smoked Salmon
- Fromage frais
- Fresh herbs: chervil, dill and chives
- Fleur de sel
- Freshly ground pepper
Instructions
For the fluffy pancakes
- In a bowl, mix together the egg yolks, milk and flour until smooth.
- Beat the egg whites until stiff with a pinch of salt.
- Add the baking powder and sugar little by little, and then whisk until stiff.
- Slowly add the egg whites to the mixture with the egg yolks.
- Put a ¼ of the mixture in a non-stick frying pan (do not add any fat).
- Cover and cook over a very low heat making sure not to turn the pancakes over. To check that they are cooked, put a knife into one of the pancakes. The blade should come out clean.
For the topping
- Finely chop the fresh herbs.
- Beat the fromage frais with the fresh herbs, then season with salt and pepper.
- Place a spoonful of the herb cream on each pancake, and then add a slice of smoked salmon.
- Serve immediately and enjoy!

Crepes With Smoked Salmon And Salmon Roe

- 1 Mixing bowl
- 1 Whisk
- 1 Frying Pan

- 4 slices Smoked Salmon
- 125 g Salmon Roe
- 40 ml Crème Fraîche
- ½ bunch Dill and/or Chives
- 1 Lemon
- Salt & Pepper
To make the crepes (a dozen)
- 50 ml Whole Milk
- 200 g Flour
- 4 Eggs
- 20 g Melted Butter
- 3 pinches Salt
Instructions
To make the crepes
- Whisk the eggs with the salt.
- Add the flour and whisk again.
- Gradually add the milk while whisking.
- Finally add the melted butter and mix until it becomes smooth.
- Leave the dough to rest for 2 hours at room temperature.
- Heat a frying pan over high heat.
- Spread the pastry finely in the pan.
- When the edges of the crepe come loose, turn it over.
- If you wish to prepare the crepes in advance, fill a pan with water, cover with a plate, heat over medium heat and place your crepes as you go along to keep them hot.
Dressing
- Grate a zest of lemon, chop some fresh herbs and mix them together with the crème fraîche. Season with salt and pepper.
- Add a slice of smoked salmon, a spoonful of salmon roe and a spoonful of the cream, lemon and herbs mixture on your hot crepe.
- Serve immediately.

- Start your recipe by whisking the eggs with 60g of sugar, 30g of rum and a vanilla pod, then follow the same method as above. Add some honey or jam.
