Earth Month Dinner: Sustainable Food and Climate-Positive Spirits

Sapling Spirits, the climate-positive spirits brand, and The Pelican in Notting Hill are teaming up to host a unique zero-waste supper club in celebration of Earth Month.

The event is set to take place on Tuesday, April 18th, and will showcase the very best zero-waste dining experience using locally sourced ingredients that use sustainable production methods.

Londoners will have the opportunity to enjoy a four-course feast that perfectly pairs with a selection of Sapling cocktails to complement each course.

Earth Month Dinner: Sustainable Food and Climate-Positive Spirits

The Pelican’s head chef, Owen Kenworthy, will be curating a menu that features ingredients from local producers. The menu will be centred around the cow, sourced from Whittington Lodge Farm, a Cotswolds-based farm that aims to leave the land their cattle is raised on in a better state than they found it.

In an effort to reduce carbon emissions, the farm uses techniques such as “mob grazing” where the herd is moved to new pastures daily.

The farm owners, Ian & Cathy Boyd, provide The Pelican with a whole cow, ensuring no part of the animal goes to waste. By reducing deliveries between the farm and the pub, carbon emissions are also minimized.

The Pelican sources its flour from Wildfarmed, a company that promotes soil health by eliminating the use of herbicides and pesticides in all of its products.

Wildfarmed works with over 40 growers who use sustainable farming techniques and focus on regenerative agriculture. The flour is used throughout the kitchen, in The Pelican’s housemade sourdough, and in pastries, and desserts.

Sticking to their policies of never allowing single-use plastics on-site and working with carefully selected suppliers, The Pelican and Sapling Spirits are confident that hosting a zero-waste dinner is achievable.

Sapling Spirits will co-host the supper club, where guests will be educated on its British-made spirits. The brand was first founded in 2018 as the world’s first climate-positive British-made spirits brand.

They use local ingredients to reduce transport emissions and produce both Vodka and a London Dry Gin range. For every bottle sold, a tree is planted.

The four-course menu, curated by Chef Owen Kenworthy, will be accompanied by Sapling zero-waste cocktails. The event promises to be an unforgettable experience for all who attend.

Zero Waste Menu

Canapés

  • Cod’s Head on Rye bread

Starters

  • Wonky carrots, soured cream, nettle
  • Fermented Cauliflower leaves & Devilled Eggs
  • Braised Ox Tongue, wilted greens

Mains

  • Fifth Quarter Hot Pot
  • Lettuce with a mustard dressing

Dessert

  • Soused Blackberry, Rhubarb & Almond Cake
